Spectacular Pudding

... served at a College Feast.

The Menu describes it as "Ginger Brûlée with Rhubarb TarteTatin and Rhubarb Sorbet". But that does not do justice to the exploding ginger granules on the brilliant Brûlée crème, or the chocolate spears (whose purpose is not defined).

You might see that the two main components of this pudding are glued to the larger dish with caramel in order to keep them in place! What artifice will chefs get up to?

For the record, here are some other pictures form the event. They were taken with ambient (low-level: candles and the like) light, so I set the ISO rating high and accepted rather grainy and/or blurred images.
