Rhubarb Finale

Finally I managed to use the rhubarb I pulled from the garden at the weekend. It was a real dilemma deciding on what to make but a choice had to be made. I settled for a rhubarb compote (recipe by in my guilty pleasure pantry) on top of a sponge cake served with custard.
