Birthday Pie

'Tis Joe's 17th birthday and I made him a pie. 'Tis Sunset Pie, so called after I first made it when we were newly arrived on the Isle of Man in 2002 and the magnificent Peel sunset accompanied us for dinner. Slight problem that the recipe was never written down and I can't quite recreate it the way Joe remembers it.
