Calamansi (kuh-luh-mun-see)
We're off to the mountains tomorrow and I had a bit of cooking to do today. I prepared Portuguese chicken and had to get some "calamansi" fruit to add to the marinade. It is our equivalent to lemons and makrut lime and is an essential in the Filipino kitchen. They look like kumquats and have a very tarty-sour juice.
