Meet Mr. Abu. He walks down our street pushing his cart every afternoon and walks back up it after dark. He cooks a number of things from his cart, but the very best is roti.

What is roti? You ask. Well, I'm sorry you can't taste if for yourself because my description will hardly do it justice, but I will do my best. Roti is a snack/dessert made by slicing rounds of banana and sometimes an egg into the middle of a flat, thin circle of dough. The edges of the dough are folded on top of the pile of banana to make a rectangle. Both sides of the banana-filled pocket are cooked on a skillet/shallow wok built right into the cart. The cooked roti is cut into squares, drizzled with sweetened condensed milk and sprinkled with sugar (if you want).
