Chicory

This beautiful little flower was used to make 'poor man's coffee' during and after the first World War; also, a strain of the plant called endives is used in salads. I offer you this information because I read it on a placard near the plant, not because I know anything about it. Although, I can remember my father drinking Camp coffee (it came in a bottle) and I think that was made from chicory.
