Every Monday is market day in Mirapoix, and in addition to fruits, vegetables, nuts, olives, cheeses, le boucherie, live chickens and ducks, knives, clothing, spices, jewelry and so on, there was this young man with his "made for today" paella. Once upon a time in Spain when I was a student and theoretically in class followed by evening study, I was instead on the beaches drinking sangria and beer like a fish, downing paella whenever I could and then hitting all the bars late into the night. This fellow's paella was every bit as good as Valencia and my memories of that long ago summer!
