LOOOOOONG day at work today - Mondays have become super insane at work lately, but I guess that's usually the case. If it wasn't, the Bangles wouldn't have had a hit song....

Made this sandwich for dinner - roasted eggplant, roasted tomato (both from our CSA bin), field roast, fresh buffalo mozzarella and basil sandwich, with a homemade garlic mayonnaise (from the crunchy slaw that I made last night) - all on jalapeno pepperjack corn bread from Great Harvest. Possibly the BEST sandwich I've ever had.
