Calentita
I decided to make some Calentita today. Calentita is the national dish of Gibraltar, and verrrrrry simple to make. The ingredients are as follows:
250g chick pea flour (aka gram flour)
1 litre of water
Olive oil (to cover the bottom of the tin or dish you'll cook it in)
Salt and pepper
You mix the flour and water together and add half a teaspoon of salt and about seven turns of pepper from a peppermill, and then leave to stand, preferably overnight. When ready to cook, heat up the olive oil in the ovenproof tin or dish. When it's really hot get it out of the oven and pour the mixture in and return to the oven at about gas mark 3. It'll take about an hour to cook, but could be around 45 minutes if you have a fan-assisted oven. When it's cooked, the top will be crispy but underneath it has an almost pudding-like consistency, a bit like Yorkshire pudding.
Mine's in the oven as we speak. Looks good, too, and MUCH better than the raw mixture in my blip!
