Yeee-um!
Okay, so the checkerboard thing died out yesterday.
But, this was worth blipping - eggplant parmesan from Jamie's Italy cookbook. I haven't had eggplant parmesan very often in my life (I can't even remember the last time I had it), but this may be one of the tastiest things I have ever made/eaten in my life. It's THAT good. I highly recommend this recipe, and it's super easy.
