the apple harvest is over, most of the apples have been sold. Now I have a large number of crates full of apples that I have to process before they rot. Today's efforts are 'fruity marmite' (reducing apple juice down to a spreadable paste) and making spicy apple cordial to drink warm in the winter. Here we have apples seeping in boiling water with cinnamon stick, juniper berries, star-anis, nutmeg, cloves.
