Lemon tart

So my lovely hubby is making Christmas dinner for the family for the first time - which i must say is fantastic. However his choice of pudding may make me a little nervous on the day - not that i don't like lemon tart, but that he wants to use his 'work' blow torch to achieve a caramelised top! I'll be on hand with a bucket of water!
