When life gives you lemons...

You all know the saying I'm sure. In this case, the lemons I received came in the form of university final exams. 5 exams, unevenly spaced in the final two weeks before Christmas. J has gone home already for the holidays so I've nothing left to do but study, and bake.

85 hermit cookies, 48 butter tarts, 75 shortbread cookies, lots of little gingerbread men, Remy squares (peanut butter marshmallow squares), and double batch of gingersnaps. The dough for the chocolate chunk cookies and the base for the nanaimo bars is in the fridge.

And yes Mom, I've studied some too! The 14 minute intervals between the pans going in and coming out of the oven allow ample time to learn.
