Edinburgh Winter
Italian Sunday Brunch
Made some Italian Egg Bread for breakfast, it looks really unhealthy but actually it's good for you in this cold winter weather to fill you with protein and energy for another day.
Method
2 Slices finest crusty bread (Home made if Poss)
2 Organic Free range Scottish farm eggs.
Finest exta virgin Olive Oil, and a pinch of sea salt.
Cut circular holes in bread using cake cutter. (Keep the circles)
Heat Olive oil in non stick pan.
Fry bread and break 1 egg into small teacup, then pour carefully into centre of bread,
careful not to break the yolk or it will scramble.
Fry the circles at the same time you can use them to test that the bread is browning !
Flip over and finish cooking.
Serve and garnish with basil.
Italian Coffee or Earl Grey tea is good with it and if you are really hungary before your Sunday walk, a Danish Pastry !!
