Coconut Lemon Cake

I made this to take to our friends' house for dinner - I wanted something coconutty, but unfortunately most coconut recipes take a long time and I wasn't feeling up to the challenge. One of these days I'll make coconut cream pie.

This was simple though, and SO YUMMY. (Unless you dislike coconut, in which case there is something seriously wrong with you).

And after eating some I got to hold the cutest one-month-old EVAR! (Or at least the cutest one-month-old I currently know in close proximity to me at this juncture).
