Dictionnaire Portatif de la Cuisine et de l'Office
On summer holiday 1975 in South of France in the house of an 92 years old Lady, I was given an old book of 1767. It was a dictionary of cooking made by chief cook of Louis XV.
I begun to translate it to Finnish and worked 5 years during my spare time. Book was small, had 800 pages and contained many not known words and ingredients. In my book there is 380 pages, I left away many almost same recipes.)
It was published 2005 and was successful.
The fun part of this book is "doctors word" after each cause. Many things are true today, too, but many things are hilarious! For instance, drinking coffee every day will definitely shorten your life with many years!
As many of you blip friends are English, here is a recipe of English cake:
Gâteau Angloise
Mix two fistfuls of flower, 1/2 l. milk, 2,5 d cream, 250 gr.raisins, same quantity of grease, a little coriander and muscat , 122 gr sugar, orange water and spirits, both two spoon fulls at least.
Mix well and bake .Cover ready cake with powder suger and make it brown with hot iron. ( that is same as to put it under grill.)
That's the way England was present in Versailles!
Madame Pompadour was lover of Louis XV and a new book of her life was just given to me. In one of the castles the king had an elevator that brought up to his apartment ready made table, so that he could pretend to cook in his little kitchen.He cooked well and liked especially egg dishes...
