Ginger and Almonds

Just like Elizabeth used to make

Spring must be nearly here. I say this merely because the veg box was free from turnips and filled with aubergines, tomatoes and courgettes, as well as some lovely purple garlic.

Sounds like a perfect assemblage for a ratatouille; so I dug out Elizabeth David's Mediterranean musings for reference and chucked a lot of oil and the veg into a pot.

I hope to eat in 30 minutes or so...
