Fake Pancake Day

I was totally under the impression that today was Shrove Tuesday and therefore planned to make pancakes! Much to my disappointment I realised at lunch time in the canteen, given a distinct lack of semla buns or in Finnish laskiaispulla, Pancake day is in fact next week!

All was not lost, we made the pancakes anyway and enjoyed them according to this recipe, with maple syrup and bananas, mmm! Additionally, we had some with creme fraiche, honey and then with lemon and sugar!

Not bad for a dress rehearsal!
