Apple Cake

After a weekend skiing and taking no pictures came hoem and made this really good apple cake

heres the recipe

Apple/Pear Pudding

Ingredients
Apples and or pears
8 good tblspns self raising flour
5oz margarine or butter
1 small egg
1 large egg
2 tblspns granulated sugar
Water
2 tblspns of Demerara sugar
1 heaped tspn of Cinnamon

Preheat the oven to 180.C.
Put the flour into a bowl and Rub in the butter.
Add the eggs and the granulated sugar and mix well with electric whisk and add water until it is a fairly wet mixture. Spread this mixture evenly into a large round or oval dish.

Peel and thinly slice apples and or pears and layer the slices into the dish on top of the sponge mixture until there are at least 2 layers of fruit.

Mix the Demerara sugar and the cinnamon in a piece of paper. Generously sprinkle this over the top of the fruit.

Bake in the oven for ½ to ¾ of an hour.
