Batchoy soup

Ending the day with a bowl of hot soup is bliss. Imagine a big cauldron with simmering broth , boiled for hours and just waiting for someone to ladle it into a bowl filled with batchoy noodles and pieces of pork or chicken. A big spoonful of crispy pork crackling is tossed in and with a snip-snip of the shears, it is topped with fresh scallions. For a special treat, a fresh egg is cracked into the soup.
