Lemon curd
I've decided I'm a morning person. I'm useful in the morning, cheerful, resourceful, productive. Last night, after 7pm I was none of these things. I was grumpy, bad tempered, bored, irritable, homesick for London, unhelpful. The list goes on. But after a good nights sleep I was up by 8.30am and ready to make some home made lemon curd.
It is so satisfying to be able to go and pick fresh lemons off the tree, select eggs that came from the next door small hold farm and gently heat them with sugar to form a delicious lemony mixture. Stir in some organic farm produced butter and, there you have it, homemade lemon curd ready for breakfast. Number 1 son was sent to the corner shop to by a fresh loaf. Job done, breakfast for number 2 son (and me!) was served. Yum.
