Mataio's Bucket List

Mataio, the co-owner and chef of Ciao Thyme, has always wanted to break a wheel of Parmiagiano-Reggiano cheese. With his wife Jessica looking on, he did it tonight, after entertaining his audience with interesting facts about the history and making of the famous cheese.

Did you know that it takes 1100 litres (290 US gallons) of milk to make two 37kg (84lb) wheels of cheese just like the one that Mataio carved up tonight?

We all enjoyed three savory recipes prepared by Mataio and his assistants using Parmiagiano-Reggiano, and were given a sample of the cheese to take home. We were also able to buy quantities at the wholesale price.
