Destined for the chop.....
.....as this celariac (and some carrots) will be mash by dinnertime, todays blip is a no-brainer......
Ingredients
* 1 tbsp flat leaf parsley, chopped
* 50g butter, plus butter to serve
* 1kg celeriac, peeled and cut into chunks
* 1.5kg carrots, peeled and cut into chunks
Method
1. Place 1.5kg carrots and 1kg celeriac, peeled and cut into chunks, in a large pan. Cover with cold water and bring to the boil.
2. Simmer for 15-20 minutes until tender.
3. Drain and return to the pan. Add 50g butter and mash. Season and serve, sprinkled with 1 tbsp flat-leaf parsley, chopped, and a knob of butter.
THINKS.....that doesn't look like much butter to me, think I'll double it.....and maybe add some wholegrain mustard....and maybe replace the parsley with chopped chives....Am I the only one who sees a recipe as just a starting point?
