Salsa Slop
A couple of days ago, I mentioned my weight loss due to my chronic kidney disease and that I was on a meal plan that caused me to lose that weight. You can read about that here.
This dish is what I call Salsa Slop. I had it for dinner. It is a recipe of my own making and fulfills some of my nutritional needs for one day.
Here's the breakdown -
2.5 oz ground sirloin (2.5 meats)
1 c. sauteed chopped green pepper, onion, mushrooms (1 veggie)
1/2 c. chopped tomato (1 veggie)
1/2 c. medium chunky salsa (free food)
1 tbsps olive oil (3 fats)
lots of freshly ground pepper
served over 2/3 c. of white rice ( 2 starches)
4 oz. 2% milk (1/2 milk)
What I have left for the day is
2.5 meats
3 fats
1/2 milk
4 starches
3 fruits
Plenty left to eat for two more meals and a snack.
Maybe a bagel (4 starches) and cream cheese (fats), cottage cheese (meat) and canned peaches, milk, yogurt or ice cream...
I don't dwell on what I can't eat. I think about what I CAN. And I make the most of it! Life goes on...
