Rhubarb in Bloom
The strawberries are nearly ready, too, and you know what that means...pie! I have a hard time with the crust, but now they sell very good ready-made ones at the grocery store.
I love rhubarb cake too. And it's so fast and easy to make!
Here is my darling friend Lethie's recipe:
RHUBARB CAKE
1/2 cup solid shortening or butter
1-1.2 cups brown sugar
2 cups flour
1 large egg
2 tsp vanilla
1 tsp salt
1 cup buttermilk or milk
1 tsp baking soda
2 cups rhubarb stems cut in small pieces
Mix all and put into 9x 13 baking pan.
Topping: 1/4 cup sugar + 1 tsp cinnamon, sprinkle on top
Bake at 350 degrees for 45 minutes
