Salmon Steaks

I haven't eaten salmon for ages as I really hate the way that they are farmed.
But!
As I have been in Wales these were given to me by my mother, who was given them by my uncle, who was given them by the son of a family friend who had caught the salmon in the river Wye. So that's OK
I'm a bit of a heathen as to the way I prefer salmon cooked, not for me poached, baked or grilled.
I like them dipped in seasoned flour and fried in butter making sure that the skin is crisp.
