Chickens
As we prepare for our return to the United States, I am struck even more by the differences between the U.S. and Mexico. For example, I cannot ever remember seeing whole chickens - with heads still attached - for sale in the U.S., especially whole chickens on display without benefit of refrigeration. Yet, chicken stands like the one shown here are prevalent at our local mercado. Many are no wider than a half dozen chickens laid side-by-side. All include a butcher block, so when a person purchases a chicken, it can be cut into pieces for easier preparation at home. I am continually amazed that so many chicken stands can exist in such a small area and all of them seem to do a booming business. We prefer to buy our chickens already cooked and they too cut them into pieces for easier eating once we get home.
