Preparing for winter

It's still hot and sunny, but the amount of summer produce we have stored for the winter reminds me how far through the year we are. These are paprika peppers of three different varieties - piment d'Espelette, chorizo and what I think is a yellow cross of the two - in various stages of drying. When they're dry I'll turn them into powder in a coffee mill to use when we are no longer harvesting fresh peppers.
