The Dish
Before going off to University I was given a copy of "Cooking In A Bedsitter" by Katherine Whitehorn. I still have it. It's a fantastic book, with lots of sound, practical, down to earth advice. Highly recomended if you can still get it.
This recipe is simply called "The Dish". Katherine and her flatmate cooked practically nothing else for a year. There are heaps of interesting vegetables (courgettes, peppers, aubergines etc), all layered with tomatoe puree between each layer, and liberal doses of herbs, garlic and smoked paprica.
Underneath that lot there are three pounds of steak and a bottle of Rioja. This just simmers away on the hob for a couple of hours (as long as you like really if you can stand the agony of smelling it wafting around the house as you get hungrier and hungrier).
The bottle of Rioja may sound extravagant but I don't drink.......so when we have guests and open a bottle of wine, not much gets drunk (everyone drives these days) and the rest goes in the cooking. I've made champagne gravy before now!
So this weekend has seen a fair ammount of cooking. Which is no bad thing. Hope you've all had a good weekend.
