Sauerkraut Factory
On Wednesdays we make sauerkraut. And, today was one of those Wednesdays. This is Roger running the cabbage shredder. I have a 5 liter crock and a 7.5 liter crock. Today it was the 7.5 liter. It holds 6 heads of cabbage and the shredder makes it so much easier. We can shred 6 heads finely in about 10 to 15 minutes. Then, add salt, mix well and pack it into the crock. It ferments for 4 weeks and then we put it in containers and start over. It is soooo good! We're addicted!
