Veggie option

K, D and the Sunshine gang were over on Saturday and brought a fab bag of veggies with them, (look I get excited about food....okay!). This is my attempt with the aubergine..
Aubergine and Pepper bake , care of the fab Studentrecipe site here I love this site for quick and simple meals for my crew.
The verdict.....smashing!
