Dude Diary

Today was a minimum day since it's Student-Led Conference week. I met with Liam and Landon's teachers and they set new goals and went over how they're doing in the class. I also got their report cards at that time and they're doing great!

I promised the trip to the Book Fair after conferences with a usual limit since they have a tendency to get out of hand in the spending department. Can't believe I gave in and let them get posters! That's the last thing they need. Oh well. We went home with a poster for Landon (2 Dodge Chargers on it), a poster for Liam (Angry Birds), a book for Loren AND...............

It's my dad's birthday today! Happy Birthday dad! We're looking forward to celebrating with him tomorrow....we're bringing him pizza and his favorite dessert, banana pudding.

Banana Pudding:

1 (8 ounce) package cream cheese
1 (14 ounce) can sweetened condensed milk
1 (5 ounce) package instant vanilla pudding mix
3 cups cold milk
1 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
4 bananas, sliced
1/2 (12 ounce) package vanilla wafers

Directions:

In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping.
Line the bottom of a 9x13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Chill.
