Tea & Cake and all is fine
If Mondays are my most favourite day then I think Wednesdays may be my least.
I know it's ridiculous to say it, but ever since factoring the school run into the mornings organisations I have found doing two days in a row at work to be a bit of a chore. Now don't get me wrong I love my job, it's the getting there that I find hard! I can just about cope with packed lunches and school bags and homework and reading packets and snacks (why don't they call them play pieces anymore?) and consent forms and whatever piece of equipment the little one needs for that days exploits with his child minder (swimming stuff, football kit etc etc) but add in my own laptop and lunch and site visit attire and I need a break as soon as I've reached my office.
Tuesdays are fine because it's the start of the week, Fridays are fine because they are the end of the week, but wednesdays, wednesdays, well with wednesdays I tend to struggle.
There is always one thing I can do to make the day better though and that is make a cake. It's a little addiction of mine, baking cakes and although I'd happily bake every day if I had the chance, I'm sure the stats would show that more cakes are baked in this house on a Wednesday evening than any other night of the week.
Tonight it had to be something simple for this tired brain and so i chose coconut loaf; a retro classic from my childhood, easy, quick and oh so tasty.
