Mango magic, and three cheers for chia
In an attempt to avoid nuts and dates in my dessert, I created this pudding instead using mango, lime and coconut oil. Its consistency (before adding the chia) is like the most indulgent custard or lemon curd you ever imagined. Good enough to eat without any further ado.
I wanted to add sustenance though, so in went the chia seeds (happily much easier to find nowadays). It's a little powerhouse of a seed - an exceptional source of omega 3, anti-oxidants and fibre, plus a range of minerals like calcium, as well as protein.
