In the afternoon we ventured up the hilltop to another larger vineyard his partner runs. It is here the operation happens. He showed me where the grapes are sorted from the vines, pressed, where the grape juice is sorted and stored, and of course, the cellars where the final product is put together by tastes and stored in old oaken barrels like these for years to produce Chianti Classico. The best of the best Chianti wine in Chianti.
The red rooster mark makes it Classico. Only 60% or more Sangiovese grapes grown in the heart of Chianti. Best of the best here!
