Australia Day

Today is Australia's National Day and unfortunately I can't show you that other gastronomic icon the Lemington as it was sold out. Meat Pie and tomato sauce  and of course Vegemite spread (not for the faint hearted) The lemington is a square piece of sponge cake  rolled in chocolate and grated coconut and sometimes filled with cream. my blood sugar levels just shot up at the very delicious thought of it. Huge change in weather today was supposed to go sailing but raining and southerly winds and not conducive to sailing.
