Butternut squash

I decided to use up this butternut squash that has been lurking at the back of the cupboard for a while. I trawled the internet for some ideas and ended up making a butternut squash and sweet potato casserole. It looked lovely and will be a quick tea for tomorrow. Recipe

I love the vibrant orange colour of these squashes and the network of seeds that is revealed as you slice them up.
