Anzac Tradition

It's Anzac Day tomorrow.  100 hundred years since Gallipolli.  There will be dawn services across Australia and New Zealand, as well as many other countries across the world.

LEST WE FORGET

Both New Zealand and Australia lay claim to ANZAC biscuits.   Whatever!

Here's my recipe - and I guarantee that there as many Anzac biscuit recipes as there are baking kitchens in this country and the one across the Ditch

125g plain flour
100g porridge oats
60g light soft brown sugar
50g shredded coconut
100g butter
1tbsp honey
1/2 tsp bicarb
2 tbsp boiling water

Preheat over to 170degreees C.

Mix flour, oats, brown sugar and coconut thoroughly in a bowl.

Put butter, honey and 1 tbsp water into a saucepan, and heat until butter is melted.

Dissolve bicarb in the other tbsp of boiling water, and add to butter honey mix.  Take care, because it will all bubble up.

Mix wet ingredients into dry ingredients, to a very thick paste.

Put tablespoons of mix into a non-stick baking tray, and flatten slightly with your fingers or a fork.

Bake for about 20 min until golden.
