A bee haven ...
Our quince bush is now in full bloom. Hundreds of blossoms await the arrival of the busy bees. It takes 4-5 honeybee visits per day per flower to produce a great crop of quince. The fruit from a bush is a lot smaller than a quince tree but a good annual yield will still convert to 3 x 500ml jars of rich and fragrant jelly. (see extra blip which is a sample of our last jar from 2014)
Cooking it down resembles the long process of making maple syrup. It's been labelled an "ambrosial jewel-like jelly". Serve it on a crostini, biscotti, pate, add it to a sauce, spoon it over ice-cream, pair it with blue cheese, have it with yogurt and granola, it's just endless in culinary uses. Sometimes I just spoon in to my lips and enjoy the exotic flavour.
One more thing, don't get too close to it without thick gloves, .... notice the thorn. A nurse died in 2008 from blood poisoning after being poked when she was pruning it. :(
