Friday night is curry night.
In our house, Friday night is curry night (I'm from Bradford - Curry capital for the past four years running). Sometime it's a takeaway; there are many great ones near us. But sometimes we make them, and since we are poor at the minute, it's the latter. Jhinga saag (prawn and spinach) tonight. I don't often use a recipe and just throw in whatever spices I fancy/have in the cupboard. I think methodology is more important than the combination of spices and I always brown the onions, temper the spices, let the base cook down for a long time and then throw fresh coriander in at the end (if I have it anyway). The rest I just wing it!
