More waiting

After a long day of doing very little yesterday.  I now have nearly a kilo of delicious kat-safe cheese.  Now I just need to wait another few weeks whilst it dries and then is brined and the bugs get to work on producing some flavour.  Last time it failed (either due to semi-fat milk or over salting), fingers crossed that this batch works better.
