Salad Days

I’ve decided that if my January calorie count was to be of any real benefit, I needed to extend the thinking behind it  for another month.
Not that my menu choice had too much to do with counting calories and energy levels, but more than straightforward simple fact that I love salads.
It’s not the  first choice for a January or February menu perhaps, but today salads can be so varied that you are not simply relying on fresh lettuce plucked from the garden and home grown tomatoes, as we did when I was a kid.
No. Today your salad may comprise a selection of cooked or uncooked vegetables and leaves that are not necessarily lettuce, although tomatoes (imported) are still an almost compulsory ingredient.
And then of course, eye appeal does have an impact on whether or  not the result is appetising. And flavour is added by whatever dressing you chose. My favourite is the simple addition of a sprinkling of extra virgin olive oil tempered with a dash or two of balsamic vinegar.  Both may vary in taste according to the producer and origin, and I have my favourites.
Maybe at the end of another month the calorie count will show some positive benefit, the big question is whether the calorie count, fewer carbs and less sugar can be measured in fewer inches round the waste.

At least I will enjoy the inclusion of salads in February’s meal choices. They are not just for summer days.
