In case you should wonder, the difficulty arises from the huge quantity of wind-fall apples....

At this time of year I like to produce copious quantities of apple champagne.  This is then bottled and keeps everyone happy for the rest of the year.

However this year we are overcome with the number of apples.

It is quite a balancing act because to produce a good apple wine it is necessary to have a good mix of apple varieties and including crab apples.

I even have to resort to freezing the juice of an early variety, such as Discovery , so that it can be entered in to the mix later in the season.
