Soumen noodle with tomato & cucumber
Soumen noodle is one of the popular menu in summer in Japan.
When my children were students, I offered soumen as their lunch. To cook it seems very easy, but we prepared hot water and make it cool by icy water, and we should add another indredient as egg omulet, sliced vegetables and garnish.
When the summer vacation is over, my friend and I talked each other, "We need not to cook soumen for summer lunch no more."
This is also one of my nostalgic memories as their mother.
