It's Snijbonen Time!
Snijbonen (snEYE-BO-nen) as they are called in Dutch (cut beans in English) is a real treat for me. They're sold this time of year at Coppa's Market in King City as French Pole Beans from Belgium. I cleaned up my late mom's old rotary cutter, put out a clean tea towel, and fastened the device to an old table in the basement. After prepping the beans, I fed them into the wee hopper with my left hand while I turned the triple-bladed roter with my right. Chick-chick-Chick-Chick-chick-Chick... and voila! They're ready for bagging and freezing. So good.
