Aubergine Rolls

I must be on the mend - I had energy to be creative in preparing a meal for #3 daughter and family coming to stay. The children will have been to a party first so won’t be eating. I have made up a filling for the aubergine rolls - crumbled feta, some spare bits of chopped aubergine, raisins, pinenuts, garlic and breadcrumbs. I’ll cook them in an oven dish surrounded by passata and topped with some mozzarella. I think they will be tasty.

I’m so excited about having Ella and Nathaniel to stay.
