Fruit Soda Bread.......!

Or Spotted Dog or Railway Cake as this bread is known under many guises in Ireland......
Now I struggle with this as I find it difficult to 'knead' with a light hand.....
But I decided to 'confront' my fear and make it often, because as they say 'practise makes perfect'!!
And I've found a couple of tricks....
Mix it with a large spoon, bring it together in the bowl then tip into a greased and floured cake tin and move it around to take the shape of the tin, cut your deep cross on the top and Bobs your Uncle into the oven....
IT WORKS.....!
And this looks to be the best one I've made yet....
This is loved in our house and devoured...
And none of the many shop-bought versions taste near as good...!
So if anyone would like a slice.........?????!
