Craquelin

I don’t watch Masterchef that much but a craquelin coat on Choux puffs is apparently the “new black”, so I gave it a go. It’s a short sweet dough, thin discs of which are laid over uncooked mounds of choux. These puffs have matcha flavoured craquelin. It’s pretty delicious. Haven’t perfected the whole technique yet, as the high sugar content of the craquelin makes it liable to burn if your oven is too hot, these were the best lookers!
