Store cupboard ingredients

I’m using up the contents of my drawers and fridge, so have made carrot cake for work tomorrow. This always reminds me of my aunt as I’d struggled with the cream cheese icing until she told me not to use the lower fat version, and it now works.. a little lumpy, but to continue beating would break the Swiss 10pm noise embargo!
