Leo’s Cucumber Sandwich

Had one of those very pleasant blip chats with ‘Leonine’. Not only an inspired photographer, but one of those people you’d like to meet (maybe one day).

Couldn’t believe he’d not had a cucumber sandwich (one of my newly discovered vegan go-to’s to replace cheese). So he’s just tempted me to have one for late breakfast.

Made with Lidl’s organic cucumbers which are so much firmer and flavoursome than the others. Recommended. And the sourdough is from my emergency freezer store. Added salt, and a tiny squirt of lime juice.

Which reminded me to call the brilliant Petit Prince in Westbourne and reserve bread for collection later (Sadly sourdough - already! Sold out - at 10:00 am. So getting a caraway and rye loaf instead). First outing for Mr B in 10 days - both still coughing - but better.
